Rocky road fudge is one of my favorite Christmas time candies. My grandmother made a big batch every Christmas and I couldn't get enough. The kids helped me make some for the teachers' lunch today.
We used peppermint marshmallows, but they only gave the fudge a very faint hint of peppermint. They were still delicious, but I was a bit disappointed the marshmallows weren't more minty.
12 oz bag of semi sweet chocolate chips
2 tablespoons of butter
14 oz can of sweetened condensed milk
2 cups of salted roasted peanuts
10 oz bag of mini marshmallows
In a very large bowl, mix the peanuts and mini marshmallows together and set aside. In a microwave safe bowl, mix the chocolate chips, butter, and sweetened condensed milk together and microwave in 30 second intervals, mixing each time, until the chocolate chips are melted. Then mix the chocolate into the peanuts and marshmallows. Pour the entire mixture into a waxed paper lined 13x9 pan and refrigerate until set. Cut them into small squares to serve.
