"Make a freezer pie" was one of our bucket list pulls last week and we decided to make a blueberry freezer pie. We used a strawberry freezer pie recipe that I adapted from Southern Living Magazine.
ready made graham cracker crust
1 cup of fresh blueberries
1 cup of blueberry pie filling
1 can of sweetened condensed milk
4 oz of softened cream cheese
1 pack of Knox gelatin
2 cups of whipping cream (divided)
To make our pie
Process one cup of fresh blueberries and set aside.
If you're using a stand mixer, use the whip attachment to mix the cream cheese, condensed milk and gelatin together until smooth and creamy. One low, mix in the fresh blueberries and blueberry pie filling into the mixture and set aside.
In a separate bowl, whip 1 cup of whipping cream until peaks form and fold into the blueberry mixture. Spoon into the graham cracker crust and freeze for 8 hours.
Whip the other cup of whip cream with 2 teaspoons of sugar until peaks form. Top the pie with the whipped cream and freeze for another hour before serving. Garnish with a few fresh blueberries.
Our pie turned out really well and we enjoyed it. If I make it again, I might consider a good squeeze of fresh lemon juice and adding a bit of cinnamon or nutmeg to the blueberry mix.
