I made blueberry mojitos and an heirloom tomato salad for our "Happy Friday" night drinks and appetizer. The kids were still awake, but were happily watching a new movie on the big screen, so we still had some downtime without them.
I'm loving the fresh produce at the farmers market this summer! I found delicious heirloom tomatoes in a beautiful variety of colors yesterday and immediately knew what I would make with them. I paired them with some fresh mozzarella from a local dairy and drizzled them with a pesto dressing.
We went to dinner last week at a locally owned restaurant. The chef at this restaurant tries to use fresh, local ingredients as much as possible. Blueberry mojitos were the drink specialty of the night, delicious! They were kind enough to share the ingredient list with me. It was basically the same mojito recipe that I use, but with...blueberries added.
To Make a Blueberry Mojito
blueberries
fresh mint
lime juice
rum
simple sugar syrup
club soda
Muddle a handful of mint and blueberries together with about 2 tablespoons of lime juice. Strain into a glass...you may have to squeeze out some of the lime juice or just add a bit more to the glass. Add 2 tablespoons of simple sugar syrup and a shot of rum. Fill the glass with ice and then top with club soda, mix. Garnish with a few fresh blueberries and a sprig of fresh mint.
To Make Our Tomato Salad
one large red tomato, slicedone large yellow tomato, cut into wedges
colorful heirloom mini tomatoes, halved
cucumber, seeded and thinly sliced
fresh mozzarella
Plate the tomatoes, cucumber, and cheese so they look attractive. Drizzle with the dressing mix below.
For the Dressing
1 tablespoon fresh pesto
1 tablespoon olive oil
Newman's Own Tuscan Italian salad dressing
Mix together and drizzle over salad.

I LOVE tomatoes... never heard of "heirloom" tomato salad before though. But any kind of tomato salad, I'm thinking, perfect for me!
