Happy Friday Night! Mexican Shrimp Cocktail and Cranberry Margaritas

Last week, we enjoyed Mexican shrimp cocktail and cranberry margaritas for our Happy Friday night appetizer and cocktails. 

Mexican Shrimp Cocktail

1 diced avocado

1 diced and seeded tomato

1 diced and seeded cucumber

1/4 cup of diced onion
Optional 1/2 diced jalapeno pepper (I don't use this, but if you like a little heat you might try it)

1-1 ½ cups Clamato juice (find it in with the V8's)
1 generous teaspoon garlic
4 frozen cubes of cilantro or fresh cilantro

Salt and hot sauce (I used Frank’s Hot Sauce) to taste

1 pound peeled and cooked shrimp

Juice of one lime
Mix all ingredients and allow to marinate about 1 hour in the refrigerator.

Cranberry Margarita
 (1 serving)

1 ½ shots of tequila (I only used 1 shot)
1 shot of cranberry juice cocktail
¼ cup of whole berry cranberry sauce
½ shot of triple sec
10 ice cubes ( I filled about half the blender with ice)
sweetened dried cranberries, for garnish
lime, for garnish

Combine all ingredients except garnish in blender. Blend on high until smooth and frosty. Serve in margarita glass. Garnish with dried cranberries and a lime wheel. Yum!
