We picked more strawberries than we could eat this week! I made homemade frozen strawberry daiquiris and shrimp cocktail for our Friday night ritual. (Our ritual is to put the kids to bed and then enjoy a cocktail and appetizer and catch up on the week together.)
1/4 cup fresh squeezed lemon juice
1/4 cup lemon rum
1/4 cup light rum
1/2 cup sugar
2 big handfuls of fresh strawberries
2-21/2 cups of ice
Put it all in the blender and puree until smooth. I rimmed the glasses by turning them up on the juice squeezer, dampening the rim with the lemon juice, and then dipped them in a small bowl of sugar. Garnish with whipped cream and a fresh strawberry. Cheers!
